• To a fabulous summer, Shopping List July 9-13

    I hope summer is treating you well and you are enjoying the sunshine and the great outdoors. I don’t know about you, but I would rather spend as little time as possible in the kitchen and more time outdoors lounging poolside. With that spirit in mind, this week’s dinners leaves you plenty of time lounging poolside and do not forget to order one of these yummy umbrella drinks! Here is to a fabulous summer!!!!!

    THE MENU

    Monday: Meatballs over Rice, Apple Salad

    Tuesday: Chicken Skewers, Couscous Salad

    Wednesday: Cheese Stuffed Chicken Breast, Pan-Roasted Succotash, Tomato-Farro Risotto

    Thursday: Cedar Plank Salmon, Wheat Berry Salad

    Friday: Grilled Top Sirloin and Arugula Salad, Crusty Loaf of Bread

    SHOPPING LIST

    The shopping list is organized according to the grocery store aisles. I hope this makes shopping for dinner much easier.

    Meat Department

    The meat/seafood will NOT stay fresh the entire week. Make sure you freeze what you do not need right away. Take the meat/seafood out the night before and defrost it inside the refrigerator.

    1. 2 lbs. ground beef or turkey
    2. 2 lbs. Chicken cutlets
    3. 4 skinless, boneless chicken breasts
    4. 2 lbs. salmon
    5. 1 piece of cedar plank (it is usually found in the meat department)
    6. 2 lbs. top sirloin steak

    Produce Department

    1. 5 yellow onions
    2. 1 shallot
    3. 1 head of garlic
    4. 1 red bell pepper
    5. 1 yellow bell pepper
    6. 1 zucchini
    7. 1 yellow squash
    8. 4 Roma tomatoes
    9. 2 small container cherry tomatoes
    10. 1 bunch cilantro
    11. 1 bag of salad greens
    12. 3 bags arugula salad
    13. 1 bag baby spinach
    14. 2 Granny Smith apples
    15. 6 lemons
    16. 5 limes

    Dairy Aisle

    1. 1 cup milk
    2. 2 Eggs
    3. 1 cup shredded Pepper Jack cheese
    4. ½ cup of grated Parmesan cheese
    5. ½ cup shaved Pecorino Cheese

    Grain, Rice, and Bean Aisle

    1. 1 bag Basmati rice
    2. 1 cup couscous
    3. 2 cups of Farro
    4. 2 cups Wheat Berries

    Canned Goods Aisle

    1. 1 28 oz. can diced tomatoes
    2. 1 can corn (I use the low sodium kind)
    3. 1 can black beans (I use the low sodium kind)

    Frozen Food Aisle

    1. 1 bag green peas
    2. 1 bag of frozen, shelled edamame

    Dried Fruit and Nuts Aisle

    1. 1¼ cups Sunflower Seeds
    2. ¼ cup dry raisins

    Herb, Seasoning, and Condiment Aisle

    1. 1 teaspoon Ground thyme
    2. 1 teaspoon Ground oregano
    3. 1 Tablespoon Ground basil
    4. 2 Tablespoons ground coriander
    5. 2 Tablespoons ground cumin
    6. 1 Tablespoon + 1 teaspoon paprika
    7. 1 Tablespoon minced ginger
    8. Dash Chili powder

    Tip: As you have been cooking for a while, herbs seem to accumulate in the pantry. I have an entire cabinet dedicated to all the different herbs and seasonings I use. Before you go out and buy more of the “same stuff”, check your pantry to make sure you don’t already have it.

    Bread Aisle

    1. 2 slices of toast bread (white or wheat)
    2. 1 loaf of crusty bread

    Spirit Aisle

    1. ½ cup white wine

    Miscellaneous

    1. Wooden Skewers
